PIZZA IN TEGLIA
Pizza baked in oven tray

Ingredients:
750g Flour 00
500g Water
25g Sea Salt
12g Fresh yeast
250g Pomodori Pelati
200g Mozzarella
Fresh Basilicum
Extra Virgin Olive Oil q.b.
Other optional ingredients that you like
Procedure:
Melt in the water your sea salt and the fresh yeast. Add the first half of the flour and let it absorb by the water while kneading ( you can do it by hand or with a mixing machine) , afterwards add the rest of the flour. Keep kneading until you have a nice and smooth dough. Don't worry if the dough is a bit soft, because it will guarantee a better final result. Let it rise for at least 3 hours at room temperature covered with a wet table cloth.
After the rising time put it in an oven tray with some olive oil underneath, cover it again, but this time with some plastic film and let it rise for another hour.
Now you have to season it with pomodori pelati ( you can use cubes or you can mix it) , mozzarella, basilicum and extra virgin olive oil. If you want you can add other ingredients that you like on top like sausage, onions, salame etc..
Bake it in a preheated oven for 15/20 minutes at 250 degrees.
